High-Quality Vodka Meets Climate-Positive Production

At the Arbikie Distillery in Scotland, a revolution is underway. Their lineup of both brown and white spirits are all single-site, field-to-bottle products that are grown, distilled, matured, and bottled on their 2,000-acre farm. Their goal is simple, yet ambitious: to become the most sustainable distillery in the world.

With this in mind, the team, led by brothers John, Iain, and David Stirling, created the world’s first climate-positive gin and vodka. Known as Nàdar, which means nature in Gaelic, the series is at the forefront of the fight against climate change. 

After years of research, master distiller Kirsty Black chose to use green peas to create the base spirit for Nàdar because the pea crop requires no nitrogen fertilizer. By making their own base spirit, Black is also able to retain more of the subtle flavors lost in most vodkas. With its carefully thought out production from field to bottle, Nàdar Vodka boasts a carbon footprint of -1.54 kg CO2e per 700ml bottle, meaning it avoids more carbon emissions than it produces. 

Nàdar Vodka is both distinctive and delicious. On the palate, it shows a vibrant, earthy character with vegetal notes, while contrasting floral and white pepper notes come through on the nose. It works particularly well in spirit-forward cocktails, such as a classic martini. By pairing high-quality ingredients with thoughtful production methods, Nàdar Vodka is able to deliver all of the flavor with none of the planet-harming impacts.

Nàdar Vodka’s Climate-Positive Martini Recipe

  • 2½ oz. Nàdar Vodka
  • ½ oz. Chazalettes Extra-Dry Vermouth di Torino
  • 3 dashes of olive bitters
  • Olives and lemon twist

Method: Add bitters to an ice-cold Nick and Nora glass. Stir together Nàdar Vodka and vermouth in a mixing glass with ice until chilled, then serve straight up. Garnish with olives and a lemon twist
